Hey Peeps! Are you in need of a sugar fix??? (Stick with me to the end…I have an update on Reba and Barbara Jean!)
I made a Coca Cola Cake for Emma’s Graduation Open House and I thought I’d throw out a couple of recipes in case you may not have tried it yet! The Coca Cola Cake was a great opposite taste to the Strawberry Cake that I also whipped up! (The Strawberry Cake is great and easy…recipe here)

The recipe I used for the cake was one I’ve used for years. I found it in the Atlanta Journal. (From the book: “Cooking With Coke”) It’s easy, easy, easy!


The icing taste like fudge Peeps…this cake is RICH!

Here’s the recipe…and if your wondering if Pepsi will work as well as Coke…be still my heart, I’m not even going to answer that. I was after all born and raised in the ATL. There is only Coke for this Southern girl. And that’s all I’m sayin…you do what you need to do, just don’t tell me, I can’t take it I tell ya…

Coca Cola Cake (Make frosting while cake is in the oven…you must frost cake right out of oven!)
2 cups sugar
2 cups all purpose flour
1 1/2 cups mini marshmallows
1/2 cup butter
1/2 cup vegetable oil
3 tablespoons unsweetened cocoa
1 cup Coca-Cola
1 teaspoon baking soda
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla extract
Prheat oven to 350*. In a bowl sift together sugar and flour. Add marshmallows. In saucepan, mix butter, oil, cocoa and cola. Bring to a boil and pour over dry ingredients; blend well. Dissolve baking soda in buttermilk just before adding to cake batter along with egs and vanilla extract, mixing well. Pour into well greased 9×13 inch pan and bake 25-40 minutes … until toothpick comes out clean. Remove & frost immediately…DO NOT OVERCOOK THIS CAKE!!!
Frosting
1/2 cup butter
3 tablespoons unsweetened cocoa
6 tablespoons Coca-Cola
1 (16 oz.) box of confectioners’ sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Combine butter, cocoa and cola in saucepan. Bring to a boil and pour over confectioners’ sugar, blending well. Add vanilla extract and pecans. Spread over hot cake. When cool, cut into squares (small ones!) and serve…
Now and update on Reba and Barbara Jean…Check out the first of this little drama when The Husband said “We will NOT feed this cat“!Now if you read often you’ll remember that Reba disappeared for days! We were so worried but convinced she ran off and gave birth! But one day she showed up starving and looking pitiful. We spent days looking EVERYWHERE for her kittens…no luck. But The Husband has gained access to this wild kitty’s belly. And he thinks she’s full of kittens! We’re watching…just look at how much progress he’s made with Reba! (Barbara Jean will take his fingers off while eating from his hand, but Reba is very careful with him!)

He gives Barbara Jean chicken too but he tosses it! I’ll keep you posted … we’re watching for kittens and trying to get her to trust us. Have I mentioned what a softy The Husband is??? Love to you Peeps!

If you’d cut him open, you’d find Coke and Peanutbutter! LOL

Oh, yum! That cake looks delicious! Our beautiful orange cat, Milo, straggled out of the woods behind our house one day, looking hungry and tired. My husband (a son of a vet), fed him a feast of steak and milk. And guess what. He came back the next day and the next day and ending up staying for 12 years! He was a wonderful cat, always so appreciative. Poor baby passed away last summer and we miss him a lot.
I don’t which is sweeter, that delish looking cake or your hubbie? I love a nurturing soul. I’d say something is in that swollen tummy of hers! At least the cats found the appropriate house with a Gigi and a Papa who know how to properly spoil an animal! Do the dogs scare the cats at all?
That cake looks like a dream come true! I’m definitely copying the recipe!
