Cooking with The Husband~Chicken Cordon Bleu

It’s time for Cooking With The Husband!

It”s Foodie Friday at Michael Lee West’s wonderful blog Design’s by Gollum and The Husband is going to take this one~ The man can cook I tell ya!

He made the most amazing Chicken Cordon Bleu for our date night dinner! I had to share it with you…

I can’t resist taking pictures of him when he’s in the kitchen.

It was really amazing! The chicken was so flavorful and tender…

He bakes the potatoes in the oven rubbed in olive oil and sprinkled with sea salt and garlic powder and smothered in buttery mushrooms…

Here’s the recipe…

Chicken Cordon Bleu

6 skinless, boneless chicken breast halves

6 slices of Swiss cheese

6 slices Canadian bacon

3 Tablespoons all-purpose flour

1 teaspoon paprika

6 Tablespoons  unsalted butter

1/2 cup white wine

1 teaspoon chicken boullion granules (Low sodium)

1 Tablespoon cornstarch

1 cup heavy whipping cream

~Pound out chicken breasts. Put a cheese and a ham slice on each breast. (keeping away from edges) Fold the edges of the chicken over the filling. Put a toothpick in to secure. Mix the flour and Paprika   Coat the chicken with the mixture.

~Heat the butter in a large skillet over medium heat and cook the chicken until brown on both sides. Add the wine and boullion. Reduce heat to low and cover. Simmer for 30 minutes until chicken is not pink .

~Remove the toothpicks and move the chicken to a platter. Blend the cornstarch with the cream in a small bowl and whisk slowly into the skillet. Cook stiring until thickened. Pour over the chicken.

Very lucky girl! Delish looking meal. And dh cooked it for you? Awesome. Hmmm, this time it looks like Mike is living HIS legacy Robin :) Both of you are such a good example of how to care for others and care for ourselves. Well done! Thinking of you this wedding weekend!
