Surprise Cookies~Chocolate, molten, caramel goodness!

by Robin on May 29, 2009

I made these Surprise Cookies for Emma’s Graduation Open House and they were a big hit! I’ve had this recipe since my kids were small but it’s a bit labor intensive so I didn’t make them too often.

I thought they’d be good today for Foodie Friday  over at Design’s by Gollum. Also, I’m linking to Hooked on Fridays over at Hooked on Houses, ’cause I’m soooo hooked on cookies! Lots of great links showing what the blogworld is hooked on these days!!! And lastly, there’s the inspired blog party, A Beautiful Life over at Melissa’s Inspired Home where you can get a peek into ways bloggers are creating a beautiful life…Why do cookies give me a more beautiful life? Well, like I said, I’m hooked on cookies! Enjoy Sweet Ones…

I’m gonna jump in with the recipe because I took some pictures that I thought might be helpful when you’re hiding the surprise inside the cookie dough! Oh did I tell you…the surprise is a Rolo candy! (dsc_3374(Now, I’m not a fan of Rolos but when baked in a cookie they go all gooey and molten and yumalicious!!!)

Surprise Chocolate Cookies!

2 1/2 Cups All Purpose Flour

3/4 Cup unsweetened cocoa

1 teaspoon baking soda

1 Cup sugar

1 Cup brown sugar

1 Cup butter (softened)

2 teaspoons vanilla

2 Eggs

1 Cup chopped pecans

app. 30 Rolo Chewy Caramels in milk chocolate

1 Tablespoon sugar

1/2 Cup Toffee Chips

Heat oven to 375* . Spoon flour into measuring cup;level off. In small bowl, combine flour, cocoa, and baking soda; blend well.

In large bowl, beat 1 cup sugar, brown sugar and butter until light and fluffy. Add vanilla and eggs; beat well. Add flour mixture; blend well. Stir in 1/2 cup of the pecans.

For each cookie, with floured hands, shape about 1 heaping tablespoonful dough around 1 candy, covering completely.

In small bowl combine remaining 1/2 cup pecans and toffee bits. In another bowl put the remainder of the sugar. Press one side of each ball into pecan mixture. Then into sugar. Place nut side up, 2 inch’s apart on ungreased cookie sheet. (I use baking sheets or parchment)dsc_3362

Bake at 375* for 7-10 minutes. Cool on cookie sheets for 10 minutes or until cool…otherwise the caramel will make a mess on the bottom of the cookie!dsc_3360

These are a little bite of molten goodness when hot out of the oven! Really, really good Peeps!

These look absolutely divine.

Chocolate and caramel is second in my book only to chocolate and peanut butter.

There was a famous advertising campaign in the UK, with the line “‘Do you love someone enough to give them your last Rolo?”
I guess that’s the big question with these scrummy-looking cookies!

I started reading and…didn’t stop till I touched bottom.
First, the incredible molten cookies…chocolate heaven. Oh my, those cookies could really get ya in trouble. I would imagine it’s safer to bake them for a special event to avoid the temptation og eating a dozen!

The wedding decor was exquisite. I adore the idea of a candy bar.
All those sweet confections in shades of pink, sooo pretty.
What a wonderful sparkling send off too.
I’ve had such a nice visit.
Thanks for stopping by my humble spot. I will be by again.

Sweet wishes,
Sara

the taste of one of these is still lingering on my tongue as i type this. fantastic cookie! i like that the dough’s not too sweet, because it would compete with the candy otherwise.

i made a half batch and 2 packages of rolos was perfect! the only perplexing thing is that mine didn’t spread like yours did. i enjoy a thicker cookie, though, so i’m pleased! thanks for sharing!

btw, made the banana chocolate chip cake you posted and that was a HUGE hit with our small group. made it as a 9×13 and it worked fine. it was a thick piece though.
