Chicken Salad BLT Panini

Wow, this panini or pa-noo-noo, as we call them at my house, was really good! It’s Foodie Friday and the big Foodie blog party is under way over at Designs by Gollum,, so I’m linking there. Shoot over there and check out some grrrreat recipes!

Last week on Blessed with Grace blog, I saw a recipe for chicken salad that had bacon in it. Now your talking…I immediately thought of a Chicken Salad BLT Pa-noo-noo…I don’t know why. I was hungry I suppose. Her recipe sounded perfect for serving on lettuce, it has almonds and grapes which I love when eating a girly lunch of chicken salad. But when I do chicken salad sandwich I prefer to leave out the almonds and grapes…here’s my go-to chicken salad recipe with the heavenly addition of BACON!!!

Chicken Salad with BACON!

4 Cups of cooked chopped chicken

1 cup chopped (finely chopped) celery

1 Cup mayo

1 cup ranch dressing (more or less to taste)

1 Tablespoon dry mustard

1 or 2 shakes of paprika

1 quick tiny shake of nutmeg(I know…but that’s what I do)

5 slices of center cut bacon…crispy…chopped…(

She said the bacon adds “depth of flavor” and OH MY HOLY COW…she’s right!!!)

Combine everything mixing well…

I put this on Publix whole grain Italian bread…I can not say enough about this bread….I won’t try, just can’t do it!  Then added slices of a beautiful vine ripe tomato and sprayed both sides of the sandwich with Pam and put on the panini press but you could just put in a frying pan and press down with a heavy lid or even a foil wrapped brick. (that’s what I did before I got my panini maker!)

These turned out to die for. I love a good sandwich. I could live off of sandwiches…I heart this one more than any other…Happy weekend Sweet Peeps…remember to live today the legacy you want to leave…

Wow, mayo and ranch with a little bacon… now that is one tasty flavor combo. You need a place on your site like PW for all of your reipes, so I can come back and try more of your recipes!!
