Squash-Vidalia Onion Casserole

It’s Foodie Friday over at the wonderful Michael Lee’s blog, Designs by Gollum. Loads of  recipes for you to check out!

First you simply chop the squash and sweet onions and cook them in a bit of butter, salt and fresh ground pepper.

Here’s the Recipe…

Squash-Vidalia Onion Cassarole

3 1/2 lbs Yellow Squash chopped

6  med. Vidalia Onions chopped (or other sweet onion)

1/2 stick butter

Salt to taste

Pepper to taste (But I’ll tell you, I use a LOT of pepper)

1 can cream of chicken soup

3 cups sharp cheddar cheese

2 eggs beaten lightly

8 slices of bacon – cooked crispy and chopped fine

*Cook squash, onion, butter, salt and pepper until squash & onion are done.

*Drain squash and onion well…

*Combine remaining ing. and mix with squash and onion.

*Put in a 9×13 and bake at 350* for 30-40 minutes or until bubbly.

This has the best taste!  I served it with Roast, mashed potatoes, fried corn and biscuits. It was a perfect addition to a supper of comfort foods!

I’d be all about this….but my hubby declares to not like summer squash. Personally, I think he’s a food snob. hahahaha! Anyhoo…. fried corn? Never had fried corn. Never even heard of frying corn. Seriously. — OK, random question…..do you work outside the home? Blessings, SusanD

g’day!

well I have to tell you I’ve never seen a recipe for that and I lurve the look of it, we eat a lot of casseroles, crockpot dinners and one-pot things though recently I am so bored with eating the same ole thing again and again…this however gives me a change AND it looks so delicious and colourful plus easy way to get vegies

I have been looking for my onion casserole recipe. Haven’t made it for years but this is similar. Thanks for the reminder I will now take it from here and try to remember as I go. I’ll be sure to share when I get it right.

I have never heard of this casserole before! It sounds like an interesting flavor combo, and is also sounds very “Southern” to me. I cannot get over the fact that you have summer squash already!!

An Atlanta gal (my hometown), uses lots of pepper in her squash casserole (so do I), and she read The Artists Way (my copy is now held together with a big rubber band), I guess it’s true — birds of a feather, flock together!

For those who don’t think their families will eat this, I can only tell you I’ve served this casserole to my non-Southern friends for too many years to remember and I can’t think of one person who didn’t love it! Remember Mikey? Try it, you’ll like it!

Hmmm…I don’t know what happened to the comment I left this morning, so I’ll try this again. It didn’t post at the time, so I thought I’d come back and check.

Anyway, I love squash and onions — in a casserole or cooked in a skillet and served with lots of pepper. I had to stop by and visit a gal from my home town, who has also read The Artist’s Way, and was cookin’ up some squash and onions!

I learned to make this recipe when I lived in Atlanta when I was first married.
It is good with a mixture of yellow squash and zucchini. Sometimes I add a pound of my favorite spicy sausaged brownedup into it for an entree.
My kids all have eaten this since they were little.
Try it and enjoy!
I just recently stumbled upon your blog and love it! It brings back wonderful memories from the early years of my marriage when we lived in the gracious beautiful south.
