Southern Fried Corn

Here’s a fun recipe for the crop of corn that’s coming in any day now!!! You can always use frozen corn…I’m partial to white corn for this recipe.  It’s a bit different maybe…now don’t judge…when I say it’s fried…because Fried Corn is sooooo good! It’s adapted from Southern Living, The Ultimate Cookbook...which has been my “go-to” cookbook for almost ten years. For that matter, Southern Living cookbooks have been the standard in my family for as long as I can remember.

Fried Corn

12 ears fresh corn (I like white corn…you can use 2 bags of frozen corn)

8 – 10 slices of bacon

1/4 cup butter

1 teaspoon salt

1/2 -1 teaspoon ground pepper

*Cut corn from cob…set aside

*Cook bacon until crispy…(use large skillet). Reserve  about 3 tablespoons of bacon drippings.

*Crumble or chop bacon into little pieces.

*Cook corn, butter , salt and pepper in bacon drippings over med. heat for app. 20 minutes or until corn is a bit brown. Stir often.

*Stir in bacon pieces. You can serve immediately or even put into a baking dish and heat in the oven for 15-20 minutes right before serving. (Works a little better to make and serve immediately!)

Yumalicious with a “Comfort Food” Supper of Roast, Fried Chicken or Ham…try it once just for the Southern Fun of it!!! Happy Tuesday Peeps~

See I would never have thought to put corn and bacon together, and to cook it together that way. Wait till I show my neighbor who grows a patch of sweetcorn in at her father’s farm. We’re always looking for new recipes! Thanks for sharing Robin!

My Mom used to make this a lot! It brings back great memories for me. Now that corn is in season I will have to try this recipe.

I LOVE corn. It is one of my favorite vegetables. I can get eat on the cob or creamed. It really doesn’t matter. I am bookmarking this recipe. I love these Tuesday memes. I find so many good dishes to prepare for my family.
