Pimento Cheese Spread and S’More Cookies!

It’s Friday Peeps! Can I get an amen?  It’s Foodie Friday over at Designs by Gollum and today I’m doing two quick little fun foods!

As you know I’m Southern, when I was growing up this was a mainstay in our house…Pimento Cheese! Not all Southerners like Pimento Cheese as it turns out, The Husband wrinkles his nose when I crave it. I ate at a fun place in Midtown Atlanta twice last week (South City Kitchen), on the weekends they serve Pimento Cheese as an appetizer! This is what got me thinking about P.C.  Sometime restaurants around town offer Pimento Cheese Burgers…I’ve never eaten one of those but I’m going to try one sometime! This is NOTHING like the P.C. you get prepackaged in the grocery store. My mom made it but sadly I never got her recipe. I did however find one online and (as usual) changed it up a bit…

You could also eat this as a sandwich on white bread…that’s the way Mama used to serve it!

Pimento Cheese

*1/2 lb. sharp cheddar

*1/4 lb Monterey Jack

*4 ounce jar of pimentos (drained)

*1 kosher dill spear (chopped fine)

Cut ingredients except pimentos into large chunks.  Place all ingredients in food processor and pulse just long enough to roughly chop. Don’t puree.

Put in large bowl and mix with 5-7 tablespoons of Duke’s Mayo…(or whatever mayo you like!)

Refrigerate but set out for 20 minutes before use.

Okay…my next little random food is fun and exciting for two reasons…the first reason: they’re Smore Cookies!!!  We’re talking graham crackers, chocolate, marshmallows…now that’s what I’m talkin about! These are EASY! And when I pulled them out of the oven all gooey and warm I thought ‘this would be perfect for a kids sleep over snack!!!!’ Then I poured a mug of milk and thought ‘these are also good for  a 47 year olds late night snack‘…and I ate 4 right before bed. They were GOOD Peeps!

Remember I said they were fun and exciting for two reasons? Well the second reason is that the recipe is from the new website by the Pioneer Woman!!! You know how much you love her at Confessions of a Pioneer Woman? Pimento cheese eh? Sounds good to me.
Gotta love that Pioneer Woman. I think she is secretly trying to kill us all off with her buttery, creamy, beefy, cheesy recipes.

My grandmother always made her own pimento cheese too.. I loved it, sadly she didn’t write it down.. was all from in her head.. I’ll have to give yours a try. Thanks for sharing.

I haven’t had pimento cheese since I was a kid. My mom always served it on good old Wonder Bread. I”m definitely going to try your recipe, but I think it will amazing on a good grain bread. Thanks for taking me down Memory Lane!

I saw the s’more cookies on Tasty Kitchen! I think I am going to love her new site :) So glad I have a personal recommendation now too!

I have only had the pimento cheese out of a jar and I do think I liked it… can’t say for sure but its been many years since I’ve tried it! I’d be all over those pimento cheese burgers though, that sounds like a great combo to me.

I love pimento cheese! I have a great recipe for a pimento cheese dip…

2 cups extra sharp cheddar, shredded
1 80z package of cream cheese, room temp
1/3 cup mayo
1 4oz jar of diced pimentos, drained
pinch of garlic powder

beat cream cheese until smooth
add cheese, mayo, garlic powder, mix until incorporated
stir in pimentos
refridgerate until ready to serve
serve with your favorite cracker (or frito’s)

I always love your posts. Being a southern girl (born and raised in MS, you can’t get any more southern, and living in SC for the last 23 years) I always have so much in common, especially in food.

My entire family loves Pimento Cheese and we also do something similar to your cracker thing. We take Ritz crackers, smear peanut butter and add tiny marshmallows to cover, place on cookie sheet and heat until light golden and melted. Yummy. :) My daddy made these for me when I was a little girl and now my 22 and 2o year old kids still ask for them. :)

My Pimento Cheese recipe is similar to yours but I also add 2 cups of Velveeta and instead of dill pickle, mine calls for sweet pickle juice. It is so delicious and my husband’s favorite way to eat it is a Grilled Pimento Cheese Sandwich.

I never thought to make homemade pimento cheese! I’ll bet it is so delicious and many steps above the purchased kind. I’ll have to try it. thanks for sharing!
