As you know, I love cake. Almost any kind of cake is great with me but yellow cake with chocolate frosting is my fav. I found a new (to me) frosting recipe and thought I share it. You may already know this one. It was in a cookbook from the early 80′s, and I’m pretty sure it’s been around even longer than that. I made a half yellow cake recipe on Sunday to have with our cookout.
The recipe calls for a few of my favorite things…the number one favorite thing being Marshmallow Creme! (I’m addicted to this fluffilicious sugary treat. I’m considering suing KRAFT for damages resulting from my excessive use of what I like to call : Marshmallow CRACK )
This frosting is cooked to the “soft-ball” stage…it’s almost fudge Peeps!
Here’s the recipe…
* 2 Cups Sugar
* 1 (12 ounce) can of Evaporated Milk (not sweetened)
* 1/2 Cup Butter
* 1 6 ounce package of either semi-sweet or milk-chocolate chocolate chips
* 1 Cup Marshmallow Creme
Combine sugar, evaporated milk and butter in saucepan. Cook over med. heat until small amt. dropped in cold water forms a soft ball. Remove from heat. Stir in Chocolate chips and Marshmallow Creme. Stir until melted. Frost your cake quick!!!
