Chocolate~Marshmallow Frosting!

As you know, I love cake. Almost any kind of cake is great with me but yellow cake with chocolate frosting is my fav.  I found a new (to me) frosting recipe and thought I share it. You may already know this one. It was in a cookbook from the early 80’s, and I’m pretty sure it’s been around even longer than that. I made a half yellow cake recipe on Sunday to have with our cookout.

The recipe calls for a few of my favorite things…the number one favorite thing being Marshmallow Creme! (I’m addicted to this fluffilicious sugary treat.  I’m considering suing KRAFT for damages resulting from my excessive use of what I like to call : Marshmallow CRACK  )dsc_4422

This frosting is cooked to the “soft-ball” stage…it’s almost fudge Peeps!

Here’s the recipe…

Chocolate~Marshmallow Frosting

* 2 Cups Sugar

* 1 (12 ounce) can of Evaporated Milk (not sweetened)

* 1/2 Cup Butter

* 1  6 ounce package of either semi-sweet or milk-chocolate chocolate chips

* 1 Cup Marshmallow Creme

Combine sugar, evaporated milk and butter in saucepan. Cook over med. heat until small amt. dropped in cold water forms a soft ball. Remove from heat. Stir in Chocolate chips and Marshmallow Creme. Stir until melted. Frost your cake quick!!!

    Attention Robin………………………………….
    Your Dad purchased a jar of “Marshmallow Creme” at Kroger on Sunday.
    This may not be a good thing.
    The cake looks delicious. Yellow cake with chocolate fudge icing is my favorite.
    How DO you stay skinny and still eat cake?

      Brenda…say it ain’t so!!! Did he really buy Marshmallow Crack. Oh there’s a slight chance I’m going to hell for influencing him…this is bad. Real bad. I’m sending someone in to snatch it from the cabinet…
      ps…I’m not skinny….I’m getting chubilicious and plan on slowing down the high fructose corn syrup any day now…

    I’ve always loved marshmallow creme. And that’s exactly why I don’t buy it or keep it in the house. I would be dipping out a HUGE spoonful and plopping it in my mouth……swirling it around so you can taste that creamy sweetness. OK… enough of that.
