Healthy Pasta Primavera

As some of my Peeps know, I’m trying to eat healthier after baking on a few…or ten pounds! Today, I bring you something that won’t add to your rear-end. Unless you follow it with 3 microwave S’Mores…which I wanted to do. But did not. I swear.  I ordered this from room-service  one time when I ran away from home and stayed in a hotel all by my lonesome for 2 days. I’ve been making it ever since. It’s Whole Wheat Pasta & red sauce with loads of fresh veggies and some chicken breast on top!

This is all you need! Add whatever veggies you like. (I also added mushrooms which for some reason aren’t in the picture!)

Mix the chunky veggies in the red sauce and let them simmer for awhile…

Waaa-laaa! You’ve got lunch or dinner without guilt! Remember my confessions on Friday? This is my big turn around week, I’m trying not to bake and eat marshmallow creme…so far-so good. (Of course I’m writing this on Monday!)

This looks great and I would love it just like this. I would have to blend up the veggies w/the sauce so the hubby wouldn’t know they were there. I know…right? Any hints on how to get him over that? Blessings, SusanD

We do this all the time! It really does taste fabulous and my boys couldn’t care less what is in the sauce, they just love the taste of it and eat it. I look forward to some more healthy recipes!
