Butterscotch~Pecan Apple Crisp

Today, it’s my take on Apple Crisp…I think everyone has their own recipe for this…I’d love to hear yours! Mine, probably like yours, has some yumalicious goodness…with a crumbly topping to boot! Here it is before it’s baked…

And here it is bubbly out of the oven…

dsc_4800Butterscotch-Pecan Apple Crisp!

* 1~12 ounce Butterscotch chips

* 1/4 Cup Brown Sugar

* 1/4 Cup all purpose flour

* 1/2 teaspoon cinnamon

* About  3 lbs tart apples (any apples work except Red Delicious, they aren’t that good in this!) ~ Peel & dice apples

Preheat oven to 375*. Combine butterscotch chips , brown sugar, flour and cinnamon. Set aside. Place apples in 9×13 baking dish. Sprinkle butterscotch chip mixture over apples and bake for 20 minutes. While baking…mix topping.

Topping

* 1/2 Cup flour

* 1/2 Cup packed brown sugar

* 4 Tablespoons butter (softened)

* 1 Cup Chopped Pecans

* 3/4 Cup Oats

Combine flour and brown sugar ~ cut in butter (I do this by hand)~ Mix in pecans and oats (again, I do all this by hand). Sprinkle over apple mixture.

Bake at 30-40 minutes until bubbly and apples are tender.

Serve with ice cream or just get a big spoon and take the whole 9×13 to your room and lock the door!

This is our favorite crisp recipe…we like blueberries the best but you can use peaches/blueberries or apple/blackberry/pear…..the combiniations are endless. The topping is the best…we sometimes do double just to make it super crispy….I use this topping on plain apple crisp also….it is YUMMO!
BLUEBERRY CRISP
4 c BB fresh or frozen
2 TBSP of water is using fresh
3/4 c flour
1 c brown sugar
1 tsp cinnamon
1/4 salt
1/2 c (1 stick)of unsalted softened butter
Pour BB/water in a buttered 8-9 inch deep baking dish. Mix flour, sugar, cinnamon and salt in a bowl. Cut in the butter until crumbly. Spread over BB. Bake at 350 degrees for 35-45 minutes or until top is golden brown. Serve with ice cream or whipped topping if desired…..serves 6-8 or only 4 if my husband is involved. HAHA! He has been known to eat 1/2 of it in one sitting.
