Hi Peeps! I’m doing a chocolate chip cookie recipe today!!! And for a bonus, it’s quick, easy and figure friendly!

As you know if you dropped in for a Week in the Life of a Crazy Woman, I’m doing Weight Watcher’s. And if you know me at all, you know that I’m a certified sugarholic. I so love to bake. I’m in menopause and my love for baking somehow became my go-to stress relief. Very bad for the sugarholic. After baking myself 14 lbs. chubbier, I’ve turned over new not as sugary leaf. I have been experimenting with a few figure friendly recipes. Chocolate Chip Cookies are a necessity in my life. Even if I am trying to shed some of the chubiliciousness.

This is a Weight Watcher’s recipe…
Weight Watchers Chocolate Chip Cookies Recipe
Ingredients:
– 2 tbsp butter, softened
- 2 tsp canola oil
- 1/2 cup packed brown sugar, dark-variety
- 1 tsp vanilla extract
- 1/8 tsp table salt
- 1 large egg white
- 3/4 cup all-purpose flour
- 1/4 tsp baking soda
- 3 oz semi-sweet chocolate chips, about 1/2 cup
Directions:
Preheat oven to 375ºF.
In a medium bowl, cream together butter, oil and sugar. Add vanilla, salt and egg white; mix thoroughly to combine.
In a small bowl, mix together flour and baking soda; stir into batter. Add chocolate chips to batter; stir to distribute evenly throughout.
Drop rounded half-teaspoons of dough onto one or two large nonstick baking sheets, leaving a small amount of space between each cookie. Bake cookies until golden around edges, about 4 to 6 minutes; cool on a wire rack. Makes 24 servings.
Serving size is 2 cookies
Each serving = 1 Weight Watchers Point
The recipe calls for the dough to be 1/2 teaspoon…I made the dough balls 1 teaspoon. (Making 1 cookie a serving size) But other than that I stayed exactly within the recipe,which is highly unusual for me! Just remember, unlike all my other cookies, which are HUGE…
These are tiny cookies. Which means, you mustn’t over-bake them! I ate them straight out of the oven (no surprise here!) and they were melt in your mouth delicious. But I saved a few for The Husband and those got a bit hard. I may have simply over-baked them a bit but one thing I know for sure…if you eat them while they’re hot, they melt in your mouth.

I don’t know that I ever made these, but I made lots of WW dessert recipes when my husband was religously counting points–almost all were delicious. I’ll keep this one!

Good ol’ WW. They call my name all the time. This probably isn’t the best advice to give someone trying to behave themselves on the program but did you know if you microwave a cookie slightly it has that just from the oven taste again? Oh ya.

Greetings~ I’m finally back from my summer long blogcation.
As summer comes to a close…there’s one thought that can cheer me up, it’s the anticipation of Fall and all the seasonal baking. Creating some confections without so many calories would be a nice change.
I read your previous post too….What a very touching story. I loved the eloquent way you expressed the event that took place on your walk. I agree, the loss of a pet is like losing family…as I’m sure Lady was. It made me think… how greatly important it is to let those around us know how worthwhile they are. My excursions are limited, but I try to greet people while I’m out and about. Most times we stop and engage in a nice chat. I’m sure George will appreciate your friendly smile when he sees you on your next walk. Who knows, maybe he’ll join you. I hope you share any future encounters with him.

I’m not sure if you read my previous post about my high blood pressure scare a few weeks ago. Hence the major healthy lifestyle change and new medications.
One of the new meds is a water reduction/BP pill so that is why the weight fell off very quickly in such a short time. I’m fully expecting it to slow down to snails pace now. Shucks…if only it could be that easy from here on out. LOL!
