Figure Friendly Chicken Lasagna and Italian Shells…

Well we haven’t done this for awhile! Cooking With The Husband!

The Husband has been whipping up some amazing Figure Friendly dishes since we started on Weight Watcher’s! This is the best one by far!

He used the same red sauce recipe for Shells and Lasagna.  And he uses chicken breasts instead of beef…

I wonder what I said to make him blush? Like I’ve said before, I love a man who knows his way around the kitchen!

He choose all low calorie ingredients. Each serving has about 8 Weight Watcher’s points…and the servings are big Peeps!

The Husband’s Chicken Lasagna

4 large  chicken breasts

Package of sundried tomatoes

3- 16 oz cans tomato sauce

1-12 oz can tomato paste

12 oz can of mushrooms

1 oz- minced garlic

2 teaspoons sugar

16  oz fat free cottage cheese

12 oz part skim ricotta cheese

12 oz whole wheat lasagna noodles

¼ cup egg substitute

2 packages of fat free mozzarella cheese shredded

In a medium sauce pan, mix tomato sauce, tomato paste, garlic, and sugar, and simmers for 30 minutes.

Cut chicken breasts into small cubes and sautee with one tablespoon of olive oil and minced sundried tomatoes.  Salt and pepper to taste.

Cook lasagna noodles and drain.

Mix cottage cheese, ricotta cheese, and egg substitute.

Spray Pam on 9×11 cooking pan.

Layer ingredients  like this:

1.       Red  sauce

2.       Lasagna noodles

3.       Red sauce

4.       Chicken and sundried tomato

5.       Cottage cheesed and ricotta cheese

6.       Shredded Mozzarella

7.       Noodles  again

8.       Repeat- until pan is full

Top with red sauce and cover with aluminum foil and bake at 350 degrees for 45 minutes until hot inside.

***For Shells***

Jumbo Shells (Cooked)

Chop chicken into smaller finer  pieces

Put chicken mixture and cottage cheese mixture into each shell

Put stuffed shells in a 9×13′ pan and pour the red sauce all over the top.

Put mozz. cheese on top and bake for 20-25 minutes until cheese is toasted and shells are hot. (I put the oven on broil for a minute to toast the cheese on top)

The recipe will make 18-20 shells. You may need a 8 x8 pan in addition to the 9 x 13!

That look so yummy! The only thing my husband makes for me is stuffed shells….about once a year but they don’t hold a candle to what your husband has made! Shhh! Don’t tell mine or he may never cook for me again!

The Husband totally has me beat… I made ramen noodles in the microwave today :) If he tried to cook in my kitchen he would be in despair over the fact that I would have nothing for him to cook WITH. I’ve always wanted to be a good cook, but I don’t think it’s going to happen…
