Marshmallow Monday! S’more Cuppy Cakes!

WooHoo! It’s Marshmallow Monday and I’ve got a little cupcake recipe from Ms. Martha!Yumaliciousness abounds Peeps! I couldn’t do Marshmallow Monday’s without at least one S’More recipe!

S’More Cupcakes! I used a Marshmallow Cream Frosting  from the Kraft website since Martha wanted me to make my own Marshmallow Cream…and I didn’t want to!(Sometimes Martha does things the hard way…)

They were pretty cute with all that Marshmallow Cream and Graham Cracker Crumbs…but really…how ’bout that bokeh!? I’m going to have to take a moment and zoom in on those icy crystals in the background that are making that delicious bokeh…ready?

Martha Stewart’s S’more Cupcakes

* 2  and 1/4 cups and 2 tablespoons sugar

* 1  and 3/4 cups all purpose flour

* 3/4 cup plus 1 tablespoon cocoa powder

* 1 and 1/2 teaspoons baking powder

* 1 and 1/2 teaspoons baking soda

* 1 teaspoon salt

* 2 lg eggs

* 1 cup milk

* 1/2 cup vegetable oil

* 2 teaspoons pure vanilla extract

* 1 cup boiling water

* 1 and 1/2 cups graham cracker crumbs

* 1/3 cup unsalted butter, melted

*9 ounces semisweet chocolate chips

Preheat oven: 350*

Add 2 cups plus 2 tablespoons sugar, flour, cocoa, baking powder, baking soda, and salt together into bowl, mix with electric mixer.

In large bowl, mix eggs, milk, oil, and vanilla. Add to flour mixture and beat on medium. Scrape bowl and mix for 2 minutes. Add boiling water and stir to combine.

Place graham cracker crumbs, remaining sugar, and melted butter in a bowl. Stir.

Put about 1 tablespoon of graham cracker mixture into the bottom of each muffin cup (that you have sprayed with Pam). Use a spoon or small glass to pack crumbs into the bottom of each cupcake liner. Remaining graham cracker crumbs are used for topping.

Put a few chocolate chips on top of graham cracker mixture in the bottom of each cupcake liner. Bake this for about 5 minutes. Remove from oven and fill each muffin cup three-quarters full with cake batter. Sprinkle each with remaining chocolate chips and graham cracker mixture. Return to oven and bake until tops are firm and toothpick comes out clean. (18-20 minutes) Cool Completely and frost with Marshmallow Frosting.graham-cracker-crumbs


Kraft Marshmallow Cream Frosting

* 1/4 cup (1/2 stick) butter softened

1 jar (7 oz) Marshmallow Creme

1 tsp vanilla

1 package (16 oz) powdered sugar

1 to 2 tablespoons milk

Put butter, marshmallow creme and vanilla in small bowl; beat on medimum speed until well blended. Gradually add sugar, beating after each addition until well blended.

Blend in milk 1 tablespoon at a time, adding the second tablespoon only if needed.

Frost Away Peeps!

See all that scrumptious graham cracker in the center? Okay, these are “Martha” cupcakes and I found that although they were melt in your mouth, they did take me longer than my usual cupcake recipes…could be because … well you know Martha Stewart, she can be complicated.  Or it could have been that I baked them late on Saturday night and I was worn slap out and moving in sloooow motion. (Confession: when I say late, I mean 8:00…)

But here’s what I will try next time…a chocolate cake recipe! I’ll keep the graham cracker crumbs, chocolate chips and marshmallow frosting, but just use a cake mix for the cupcakes! That would be oh so very much easier!!!
