Healthy Chocolate Chip Walnut Oatmeal Cookies!

I found this scrumptious recipe on the cutest website: Me and My Pink Mixer!  (You’re gonna love this blog!)

The original recipe came from Health Magazine and they titled it: The Healthiest Cookie in America!

Milk and CookiesWell, I don’t know about the healthiest cookie in America…but they’re pretty darn tasty.

I changed this recipe in a few areas but overall it’s close to the original…

Healthy Cookies

Chocolate Chip and Walnut Oatmeal Cookies

6 T unsalted butter
3/4 cup packed light brown sugar
1/3 cup all-purpose flour
1/3 cup whole wheat flour
3/4 tsp baking soda
1 and  1/2 cups old-fashioned oats
1 egg, lightly beaten
1 tsp vanilla extract
3/4 cup chopped toasted walnuts
1 cup semisweet chocolate chips or mini chips

Preheat oven to 350 degrees.

Chop walnuts and toast them on a cookie sheet lined with parchment paper for 5 – 6 minutes.

***I can’t tell you how much depth of flavor toasting the nuts adds to anything! Don’t leave off this step!***

Melt butter in medium mixing bowl in microwave.

Add brown sugar, stir until smooth.

Combine flours, baking soda, oats and salt in a medium bowl.

Combine butter mixture with the dry ingredients and add the egg and vanilla.

Fold in chopped walnuts and chocolate. Mix well.

The dough will be  dry.  Shape into balls. Bake on parchment paper lined cookie sheet for 12 minutes or until tops are dry to the touch.

This is supposed to make 32 cookies…really? I want more than a tiny bite so my batch made about 20!

Please o please o please can I leave off the walnuts? pretty please with a big huge hershey’s kiss on top? Not only do I not like the taste of walnuts they don’t go well with braces i.e. a no go, like can’t eat, like I have to forego anything with nuts in it. So…please, please, please, can I have them without the walnuts? If not, then I reckon I will have to eat one of my wife’s melt in your mouth oatmeal Scotchies.

I like the idea of toasting the walnuts. And for those who don’t like the oatmeal texture so much, I once saw a similar recipe that called for oatmeal to be blended to a fine powder. Just an idea…

These look so yummy and I love the healthy part of it. My husbands favorite cookie is Pecan Oatmeal Raisin so I am going to make it and exchange walnuts / pecans and chocolate for raisins.
I am glad you psoted a healthy version…Our home will smell so good tomorrow and I will have a happy hubby! ~?

Cannot wait to try these…love oatmeal cookies, hate raisins (yuck.) Even though it is 87 degrees today, I’ll be baking!!
