Mexican Spinach Dip

And now for today’s yumminess ! I’m doing an appetizer, you may have tried this one, it’s really popular. But just in case…

I love this dip. It’s easy breezy to throw together and it’s spicy and creamy and would be great at a party! Or just make it on Friday night for your TGIF dinner!

Mexican Spinach Dip

*1 (16 oz.) jar medium salsa

*1 (10 oz.)package frozen chopped spinach, thawed and drained ***I actually squeeze the spinach out w/ a kitchen towel. When I don’t do this, I find the dip is runny…just sayin.*****

*2 cups shredded Monterey Jack cheese

*1 (8oz.) package cream cheese, softened and diced

*1 cup evaporated milk

*1 (2.25 oz.) chopped black olives (I despise black olives, so I leave these out!)

*1 Tablespoon red wine vinegar

*salt and pepper to taste

~Preheat oven to 400*

~In a baking dish, mix salsa, chopped spinach, Monterey Jack cheese, cream cheese, evaporated milk, olives, red wine vinegar, salt & pepper.

~Bake mixture for 12-15 minutes or until bubbly…

Serve with bread or tortilla chips!

This sounds really yummy but I think I just heard my arteries clog up and go into “sucking” mode. I do agree with you on one thing: ditch the black olives. Hope your day is a good one Robin!

Your dip sounds delish! I don’t like black olives either, so I would leave them out too. Definitely printing out this recipe – thanks Robin :)

i’d say this qualifies as health food, with the spinach and salsa (veggies), and cheeses and milk (calcium and protein)!

HI sweetie, this sounds SOOO good! I will definitly try it and will keep the olives: I used to hate them too but now like them IN things!! I make an artichoke/spinach dip that is really GOOOOD too, but will try this one! Thanks!!!! XO, Pinky
