Chocolate Pie with Mile-High Meringue

I’m doing a Recipe-Redo today! This is one of The Husband’s favorites! Most people have a go-to Chocolate pie recipe, but just in case…

Chocolate Pie

First mix

~3 egg yolks

~1/2 stick butter

~1 cup sugar

~3 very rounded tablespoons plus 1 level tablespoon flour

~2 cups milk (whole works best but you can use low or no fat)

~Cook on low slowly until thickened whisking the whole time(otherwise you’ll have scrambled eggs in your pie!)

~ Add 1 teaspoon vanilla

Here’s where you decide what KIND of cream pie you want!

~For Coconut~add 1 cup coconut

~ For chocolate~add 4 tablespoons cocoa

~ For Banana ~ add 4 or 5 sliced bananas…

Put into cooked shell and chill

Use 4 to 6 egg whites and a bit of sugar to make Mile-High Meringue

Spread meringue over top …

Bake at 325 until the tippy tops of the peeks turn light brown!Chocolate Pie Mosaic

Robin, I have a confession… meringue scares me and I don’t know why. Is it really that easy to get it to come out that good? You have made this pie look terribly easy and yummy looking, but pies in general scare me!

This is nearly identical to my grandmother’s chocolate pie recipe and “to die for”! She taught me to wait on adding the eggs until the mixture is already cooking and then add a little of the hot mixture to the eggs in a separate bowl, stir and then incorporate them back into the hot mixture. Sounds weird, but seems to work pretty well and you don’t get the “scrambled egg effect”.

I have to admit that my meringue never turns out this fluffy! Maybe I’ll just go with the Cool Whip idea…you can never go wrong with Cool Whip!

On a good day, I’d suck up that pie like a bull elephant at a watering hole. It looks scrumptious. I’ve been dealing with a health issue lately that’s driven me away from some of my favorite things. (CHOCOLATE!!) You can be sure, though, that I’ll be heading back to this recipe sometime in the future.
