Living Souper Cozy~Chicken Tortilla Soup!

I’m doing a flashback Friday today ~ One of my Live Souper Cozy soups. It’s really figure friendly in case you ate too many sweets over the holidays! I can’t think of very many things I love more than a Saturday stretched out in front of me, a pot of soup on the stove and The Husband and I working on our latest project! 

~Here’s what will be simmering in our kitchen this weekend~

I combined my favorite ingredients from several different recipes to come up with this one and low and behold it’s  my new favorite soup…

Chicken Tortilla Soup~Gluten Free Naturally!

(As always, if you have Celiac Disease please carefully check all ingredients for hidden gluten)

* 1 tablespoon vegetable oil

* 1 (sliced and diced) yellow onion

* Minced Garlic (I use the jar of Minced Garlic and used 2 Tablespoons)

* 2 large (28oz) can of diced tomatoes-don’t drain

* 1 diced red pepper

* 1 diced yellow pepper

* 1 diced green pepper

* 6 Cups Chicken broth

* 1  1/2 teaspoons ground cumin

* 1  1/2 teaspoons chili powder

* 5 Cups cooked diced or shredded Chicken~

* 1 Bag Frozen WHITE Corn

* 1/4  cup chopped cilantro

* Juice of 1 lime

* Lime wedges for serving

* Corn Tortillas sprayed with Pam and cut into strips and baked for a few minutes until crispy

* Shredded Cheese for serving

In stock pot, saute onion in oil until translucent. Add garlic and heat through.

Add tomatoes, peppers, chicken broth-Stir in cumin and chili powder and bring to a boil.

Lower heat to a simmer add next 4 ingredients.

Season with salt and fresh ground pepper.

Simmer on stove for 4 or 5 hours, stirring now and then and adding salt or pepper if needed

The soup thickens up over time so don’t fret!

Prepare corn tortillas.

Add a few tortilla strips, a lime wedge, a dollop of sour cream and a sprinkle of cheese…

Grilled Cheese Sandwiches

Use 2 or 3 kinds of good melting cheese…I love “

Sharp Cheddar, Gruyere and Provolone…

Use a good bread, because I’m gluten free these days I eat Udi’s ~ Maybe I’ll learn how to bake my own one day :0

Add your mustard and if you live dangerously add mayo…(I add mayo before I heat a hot sandwich but I know it’s frowned upon…)

Always butter the bread…I love to cut calories but if I’m having a grilled cheese I don’t use cooking spray, I use whipped (softened) butter. Period. Go ahead, call me Paula Deen!

Don’t smash…I love a good Panini, we usually do a “Panini Bar” on Christmas Eve, but when making a grilled cheese I toast the sandwich in a frying pan  with a snibit of extra butter and resist the urge to smash!

Ahhh, so yummy and cozy is right. The temps are dipping and the white stuff will be upon us in no time, and I am coming here for all things warm and comforting! If I come up with anything special… you had me at grilled cheese, I will email :)

Mmmm, that sounds delicious! I will definitely try this during the Christmas rush. The grilled cheese sounds delectable too. I never thought of more than one kind of cheese. I’m like you…I never smash. ;) My husband likes his smashed though. =P

I love me some tortilla soup, oh yummy! My husband is on a meatless diet right now so I wonder if I should spice this one up more so he doesn’t miss the chicken. I’d love if you had any meatless recipes you could share them!

Megan…I wonder if adding some black beans and maybe kidney beans would give the soup some depth so he wouldn’t miss the meat!!!?
I’ll be thinking about some meatless meals…sounds like a big change but most likely a good one! xo

Ha, so funny. I just printed this soup recipe out yesterday to make soon ! I hear you about bread — making bread can be intimidating for us celiacs, but I have found an awesome recipe and am so excited about it ! My son bought me a Cuisinart bread machine (GF setting !! ) for Christmas. You just dump in the ingredients, press a button, a out comes an amazing loaf of delicious bread. The bread machine makes it so easy –I could seriously do this every week ! — Carol

I recently discovered your site and am really excited about all the gluten-free recipes! My mom was diagnosed last year with Celiac’s and as a sympathetic daughter who loves to cook I am always on the look out for new g-f recipes.
