Chili is a weekly staple around our house in the fall and this recipe is my go-to recipe. It’s a healthy alternative and naturally gluten free!
I made a quick cooking video when I cooked this on a chilly fall afternoon a few weeks ago, in case you may want to cook along with me!(Recipe follows video!)
Ingrdients:
2 tablespoons olive oil
1 red onion, chopped
1 red bell pepper, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
2 pounds ground turkey breast – or use chicken or beef.(I use white meat turkey)
2 tablespoons dark chili powder (or more to taste)
1 teaspoon Cumin
*You can add a bit of Cayenne pepper if you like it hot!*
2 – 28 ounce cans chopped tomatoes
1 – 15 ounce can white beans, drained and rinsed
1 – 15 ounce can black beans, drained and rinsed
1 – 15 ounce can dark red kidney beans, drained and rinsed
Instructions:
~In a large stock pot, heat oil. Saute onions and peppers for 5 minutes or until soft. Add ground turkey and stir until cooked thoroughly.
~ Stir in chili powder and tomatoes. Season with salt and pepper and simmer for 15 minutes. Add beans and continue cooking on low heat for an additional 15 minutes. Season with additional salt to taste. Simmer on low for 30-60 minutes to marry the flavors…Serve with sour cream cheddar cheese.

We love chili around here and this recipe looks delicious! I had to smile when I saw the corn chips on top as that is how hubby likes his. I love it with shredded cheddar. xxoo
