I’ve got another yummy soup recipe to share! I don’t know anyone who doesn’t love a warm bowl of potato soup at the end of a cold day! Don’t ya feel cozy just thinking about it?
My go-to potato soup involves BAKED potatoes! I got the original recipe from a friend years ago, since then I’ve tweaked it here and there…here’s the recipe I use these days~
Baked Potato Soup
* 6 slices of bacon (cooked and diced for soup***reserve 2 tablespoons of the dripping!***)
*4 to 8 more slices of crispy cooked bacon diced small for topping.
*1 teaspoon jarred minced garlic
*1 BIG onion chopped into small pieces.
*6 Tablespoons (all-purpose) flour
*2 teaspoons salt
*2 teaspoons dried basil
Ground pepper to taste…I like lots but be careful!
*5 cups chicken broth
* 6 large baking potaotes ~ Baked (See note below)
*2 1/4 cups of Half & Half
*1 teaspoon hot pepper sauce
*Sharp cheddar (shredded) for topping!
If I’m baking potatoes for a side dish I put olive oil in a baggy then putting the potato in the baggy I make certain it’s covered in oil. Then I put the potato on foil (not in foil!) and puncture it (the potato) with a fork a few times, sprinkle with garlic powder and sea salt on both sides…then bake at 400* until tender. I use this same method with the potatoes for this soup because the garlic and oil give the meat of the potato a wonderful taste, even without the peel! After the potatoes are done and cooled a bit, smash or dice the potatoes. (If you smash them don’t over do it, leave loads of big lumps)
In large pan use reserved bacon drippings to saute onion and garlic until onion is translucent. Stir in flour, salt, basil and pepper.
Add broth and bring to a boil. Boil, stirring constantly for a couple of minutes.
Add the potatoes, (6 slices) bacon, cream and hot pepper sauce. Heat through and serve IF you’re in a hurry. I usually keep the soup on simmer, stirring occasionally, for an hour or more.
Garnish with bacon and cheese!
This is a hearty soup so in the place of a sandwich we have crusty bread for dipping!
