It’s that time of year again…you know…apple time! I’ve got a Caramel Apple Crisp for you today that is yummy and can easily be made Gluten Free…
*****
It’s the most wonderful time of the year.
So much to love…
Summer slipping quietly into September…Mornings dawn chilled making coffee so much better… Puffs of white clouds against pristine blue sky…First cozy fires of the season…Pumpkin spice lattes … Oh, and seasonal foods…
But about the food, this is my first autumn after being diagnosed with Celiac Disease and I’m trying to figure out how to remake my favorite recipes…gluten free. The first thing on my wish list was Apple Crisp. I make a couple of versions. The first is a great low fat/low calorie version that The Husband and I love because it’s yummy and there’s no guilt involved with this indulgence! (Figure Friendly Apple Crisp recipe HERE)
The other recipe is Butterscotch Pecan Apple Crisp recipe HERE. I make it every year for our Family Pumpkin Carving Contest …
I didn’t have any gluten free butterscotch chips on hand so I played around with adding my favorite thing, Dulce de Leche and here’s the scrumptious result…
Caramel Apple Crisp~Gluten Free
*1/2 can Dulce de Leche (found in the ethnic foods)
*1/8 cup Pamela’s Pancake/Baking mix
(Just use all-purpose flour if you aren’t gluten-free)
*1/8 cup dark brown sugar
*1/8 teaspoon cinnamon
*1/4 cup (gluten free) natural applesauce
*1 1/2 lbs. (about 5-6 medium apples) apples~peeled & diced
Mix all ingredients and put into a sprayed pie pan or app. 8×8 baking dish
Bake at 375* for 15 minutes. Add topping…
Topping
*1/2 cup Pamela’s Pancake/Baking mix (or all-purpose flour)
*1/2 cup dark brown sugar
*4 tablespoons softened butter
*1 cup chopped pecans
*3/4 cup Oats (I use Bob’s Red Mill – Gluten Free)
Mix everything by hand and spread crumbles on top of apples.
Bake for about 20-25 minutes until brown and bubbly!

Isn’t autumn grand?
~Have a sweet day my friends~

Loving you from my bubble.
Thank you for the gluten free recipes. My son has Celiac Disease and I am always looking for thing he likes. Thanks to Pinterest I found you. I wondered what apples you used and if you ever tried gluten free Bisquik? I am not sure what left a grainy texture with the apples, maybe the Bisquik? I also made the peanut butter chocolate chip cookies and everyone loved them. My daughter-in-law even emailed me and wanted the recipe. Thank you again, Debi
Debi, I think I used gala apples and I’ve never tried the gluten free bisquik because I’ve read mixed reviews on it…that may be what caused the grainy texture. (I’m so happy to meet you!) xo
One of your first recipes I ever tried was the butterscotch pecan apple crisp. That was so delicious!!! We’re not gluten-free here, but I’m not adverse to trying new things and eating healthier. So, we’ll have to pick up the ingredients and give this new recipe a whirl!
I’ve been following Sara through her blog for some time – ever since I noticed the “choose JOY” link you had on your side bar. She certainly has touched a lot of lives and continues to do so even now. She’s never far from my thoughts these days. I’m so thankful you shared her with those of us who might not have stumbled upon her blog otherwise.
Yum! I think apple crisp is my favorite fall dessert. I made it last Sunday. 🙂 I thought of your butterscotch chip recipe but didn’t have any so went with my old faithful. I can’t wait to make apple cake too. 🙂 Sara has been on my mind too. Even though she is ready I can’t help feeling incredibly sad for those she is leaving behind. 🙁
Gonna have to try this. It’s definitely apple crisp season. We eat gluten free too – so am always excited for more recipes.
I’ve had a craving for this exact thing… I long for the day when you and I and whoever else sit down over something sweet and a cup of coffee and share sweet memories of our Gitz.
Dulce de leche in apple crisp? That recipe looks and sounds beyond delicious, dear! 🙂 I’m sure your others are scrumptious, too. Just a reminder to those who are gluten free to be extra careful when picking up butterscotch chips for your recipes that include those since some brands contain gluten. For this current recipe, one could even make one’s own dulce de leche using condensed milk. When I go to the upscale grocery store, I’ll look for it in the ethnic foods section though. Anyway, you’re doing a lovely job with transitioning to gluten free … thanks for sharing! 🙂
Last, I’m so sorry about your friend. My thoughts and prayers are with you both.
Hugs,
Shirley
Shirley thank you for reminding everyone about Butterscotch chips! I used those all the time before I was diagnosed w/ Celiac, since then I’ve not come across any that are gluten free…xo
what is the recipe for pamelas bake mix,, I am wheat free so I am hoping her bake mix is also.. thanks,, sounds like a good recipe,, I hope I can find the dolche stuff..
Brenda…Pamelas Baking Mix is a mix sold in stores or on Amazon…If you google it you’ll see! The Dolce de Leche is found in the ethnic area of your local grocery store! xo
I feel like I have a hole on my heart and lead on my chest. I can’t believe we won’t have her. She is an angel on earth and soon will be a heavenly angel. I am just glad that she will be free of her PAIN. But, selfishly I want her to stay. Love you, Pinky
You have the best recipes. I am still trying to find the time to make the peanut butter cookies. Your post today about the caramel apple crisp is being featured by me on Pinterest and my article at http://www.squidoo.com/october-31st–national-caramel-apple-day. October 31st will be smelling great at my house!
