I’ve got a really good recipe today!
It’s naturally gluten free and super healthy, not to mention it’s a perfect autumn-winter dish if you feel the need to get cozy.
And it’s time to get cozy, here in the deep south of the US we’ve had a chill that rivals the temperatures December! I love it to be honest…it makes me crave pink snugly socks, a fire in the fireplace and a big pot of soup simmering on the stove.
Sigh. Bliss.
All is right with the world…
So I thought I’d bring back Live Souper Cozy early this year!
(If you’re new, we did lots of ‘souper’ soup recipes last winter you can find them HERE!)
I tweaked this yummy stew all afternoon and The Husband says it’s perfect, sure hope you like it too!
(If you have Celiac Disease or are Gluten-Sensitive don’t forget to double check your chicken stock & canned ingredients!)
Chicken Veggie Stew
Ingredients:
***This makes a BIG batch of soup- I like leftovers! I use 2 crock pots or 2 stock pots …but you can 1/2 the recipe ๐ ***
*4 chicken breasts
(Put them in raw and whole-when soup & breasts are done, take them out and shred the chicken-put shredded chicken back into soup!)
*6 Cups Chicken stock
*1 28 oz. can diced tomatoes
*1 28 oz. can crushed tomatoes
*6 red potatoes diced
*4-6 slices of Canadian Bacon diced
(I use this to give a smoky flavor-it really makes a difference! Lower fat/calories than bacon& almost as good!)
*1 Tablespoon oregano
*2 cloves of garlic – chopped small
*Dash of celery salt
*Salt & Pepper to taste
*1/4 cup chopped cilantro
*1/2 large white onion-chopped
*1 cup chopped carrots
*2 cups white corn (I took it right off the cob)
*4 cups chopped cabbage
*1 cup squash (I used zucchini & yellow-1 each)

Instructions:
Put everything in a heavy pot & bring to a boil for a few minutes, stirring quite a lot!
Simmer on low for a few hours, stirring now & then.
(the longer it simmers the better!)
Take out (done) chicken breasts and shred with a fork
Put shredded chicken back into soup & stir
(while it’s simmering, get someone to stir it for you while you soak in a hot candle-lit bubble bath…ahhhh)
Serve with crusty cheese bread…if, that is, you can eat crusty bread!

All I can think to say is love your heart. I suppose it’s like having a full time job trying to figure everything out. :/ And I can sympathize about the weight. Not to even mention having to waste money on new clothes. Ugh.

I am peri-menopausal officially and the weight thing is stressful. Body acceptance for me is daily and not panicking is dependent on my loving Father’s reminder I am His and He loves me as is… The journey is quite exciting these days…

I am feeling your weight gain pain. Menopause brought my weight up about 10 lbs. Recently I was put on some meds for fibromyalgia and up another five because weight gain is a side effect. EEEKKKK! I am not a happy camper, but at least I can still have wheat and milk, so I should be thankful! ๐
Elizabeth menopause does crazy things to our minds & bodies doesn’t it? Going through menopause & finding your diagnosis for fibromyalgia would be a double whammy! I’m so sorry Sweetie. I keep telling myself that God knew about this and He’s got a plan…maybe the plan is to keep buying bigger pants ๐

Brenda…I put the chicken breast in whole and took them out after the soup was well simmered and shredded the breasts. I’m going to fix this on the recipe right now, thanks for pointing that out! I’m very absent minded these days.

I do hope you feel better real soon Robin. Hard enough to deal with Celiac now lactose intolerant. I guess the good news is now you know why celiac diet wasn’t working as well as it should.
I don’t like to see my weight creeping up either! Hard to control during menopause…

Just found your blog today thanks to Pinterest…but after reading this blog post, I cannot help but recommend that you research the Paleolithic Diet. It is gluten and lactose free and from what I have read and heard from friends on the Paleo Diet it helps balance your weight and your overall system. I found out in August that I had to be gluten, casein (dairy for those who don’t know) and soy-free. I find I miss the cheese more than anything else ๐ I bought some vegan cheese but haven’t tried it yet . . .
Shannon, I’m dairy free too! It’s really not easy is it? My doctor told me to keep eating cheese and see how I do with it. So far so good. sending you hugs
