I tried a Crustless Pecan Pie to see if I could do without the extra fat and calories that a crust brings to the pie party…
Here’s my first try…and People…wow! The Husband said: “Who needs crust!”
Crustless Pecan Pie
{Gluten Free Naturally}
* 3/4 cup Dark Brown Sugar
*1 cup Dark Corn Syrup
*6 eggs
*2 Tablespoons Butter
*2 teaspoons Vanilla
*2 Cups Pecan Halves

Preheat oven 350*
Toast pecans on parchment paper lined cookie sheet for 5 minutes. Be careful…don’t burn ’em!
In a saucepan, mix all the other ingredients.
Over medium heat (on the low side of medium) whisk ingredients (constantly) just until butter is melted.
(careful not to heat to boiling-you don’t want scrambled eggs!)
Take off heat & stir in pecans.
Pour into 9″ pie plate sprayed with cooking spray. (Pam)
Bake at 350* until center is no longer liquid & wiggly!
Let cool and chill in fridge for an hour for best cutting and texture!
(about 35-45 minutes)

Woohoo, Robin! Beautiful pie, dear. 🙂 I have been promoting crustless pies for quite some time as I totally agree with your hubby. We don’t need them anyway and having to worry whether the store has gf pie crusts in stock or worrying whether our pie crusts will come out (although I do make a couple of super simple, yummy gf pie crusts) is usually not worth the effort. Sounds delicious, Robin! I had no idea there were ready made gluten free pie crusts available. I will have to see if I have a Whole Foods in my new area. I’d love to try it.
I wish I lived closer to a Whole Foods. 🙁 The only one I have been to is Northern Virginia where my daughter lives. I went just to browse. I have a feeling I’m not the only one who would browse a Whole Foods like it was Pottery Barn! 😉 🙂 Pecan pie is one of my favorites! I have made a pumpkin pie recipe in little ramekins without a crust. Yummy. 🙂
