These flourless peanut butter chocolate chip cookies are just over the top delicious.
Don’t shy away from these if you aren’t gluten-free…they are well worth making for the yummy taste and texture and you can whip them up in 10 minutes or less! Really, 10 minutes or less!
I was skeptical about the idea of flourless cookies but my bud and fellow Celiac, Julie swore up one side and down the other that I’d love them…
And I do!!!! And so will you!
Ingredients:
***As always if you have Celiac Disease check your ingredients to make certain they are gluten-free***
* 1 cup peanut butter (I use smooth)
*1 cup packed brown sugar
*1 large egg
*1 teaspoon baking soda
*1 teaspoon vanilla extract
*1 cup semi-sweet chocolate chips

Instructions:
Preheat oven to 350
*Mix first 5 ingredients and fold in chocolate chips.
*Using your hands form palm-size balls and arrange on parchment lined baking sheets
*Press dough balls into rounds-tidy up the edges to make them pretty!
(Put the cookies about 2″ apart on baking sheet)
*Bake about 10-12 minutes until gorgeously golden!
*Cool on wire racks

I substituted Coconut Palm Sugar & Carob Chips for a wonderful sugar free alternative! They were delicious!
I’m so very sorry you got glutened … it’s the worst! I make cookies very similar to these. They use slightly less vanilla and ungreased cookie sheets (instead of parchment), and the cookies have to stay on the cookie sheet for 10 minutes to finish baking there. They are loved by all! Even with slight variations, you can’t go wrong with flourless peanut butter cookies. Yours look fantastic! I love making flourless recipes and have several I rely on. 🙂
Hope you can get that gluten out of your system quickly. Remember that anything that detoxes (like Epsom salt baths, hot steamy showers or saunas, and aerobic activity like walking, if you’re up to it of course) will help.

This recipe calls for baking soda. I’ve never added that before. I’m trying this next time. Yours do look crunchy!!
