It’s Fourth of July week, which in the US means time for week long vacations, a day of celebration with family & friends or maybe if you’re soul-weary, a day set aside to rest.
Times set aside for celebration are important for all sorts of reasons but the main reason I love them is perhaps summed up with this:

Being a bit of an introvert I have a tendency to crave alone time. Nothing wrong with alone time, we introverts need it to recharge and stay sane. But were it not for special days set aside for family and friends, I’d choose what’s easy. I’d forget that my life becomes a tapestry as I weave time with people I love. I’d forget to remember that time set aside for celebration is worth the trouble.
With that in mind, I found some kinda fun sweet stuff for summer celebrations…
Well, this is a healthy way to have a little fun at your Fourth of July celebration 🙂
And when I saw this colorful fruit salad my first thought was: “Taste and see that the Lord is good…”
Wouldn’t it be fun to bring out a tray of these on the Fourth of July?

This Strawberry Pie looked refreshing – somebody make it and tell me if it’s delicious! 🙂
This last one is my recipe and it’s ever-so-summer delicious, not to mention easy…Strawberry Cake (I’m sad to say it’s not gluten-free though…boo, so I haven’t made it since my Celiac diagnosis-but for all you gluten eating peeps…seriously-no joke, you gotta try this!)
