After a few months of going off the rails with our eating, Mike and I are settling back into our regular diet of eating grain free most of the time. This works for us and we feel so much better eating this way! But honestly, after so many sweet snacks during the holidays, it’s been hard not to have a little something yummy on the weekends. With that in mind, last Friday we made these yummy flourless blondies!
With the Super Bowl and Valentine’s Day coming, I’ve been looking at some grain free snack ideas for Mike and I.
This Flourless Blondie recipe is super yummy and really easy to make!
In preparation for our big snow day last week, my daughter Steph came over with Ellie and Finley and we put this recipe together!
They turned out crispy on the outside and chewy on the inside…
Ingredients:
* 2 cups peanut butter
* 2 Eggs
* 1 cup Palm Sugar
* 1 cup white sugar
* 1 teaspoon Baking Soda
* 1 teaspoon vanilla
* 1 cup semi sweet chocolate chips
* 1 cup toasted pecan pieces
Instructions:
Combine all ingredients with a mixer except the pecans—stir them in after everything else is mixed together.
spray pan (we used a 7 x11 glass pan) with Pam
press mixture into pan and bake at 350* for 18-25 minutes or until brown and firm.
Cool and cut!

These blondes are making me hungry.mive been gluten free for over 6 yrs and feel so much better too. I feed Hunter(the pickiest dog in the world) grain free as well. Thanks for sharing-will have to make these soon; got to look up palm sugar first though.
