This Ham & Brie Brunch Pie is absolutely amazing. It’s not your mama’s quiche my friends!

Do you love Sunday Brunch? If you do this is a GREAT recipe for a brunch or for that matter it makes for a yummy late night dinner!
This was one of the savory pies from our Cutie Pie Baby Shower HERE. I had to remake this before I posted the recipe because I wanted to make really sure it was really good!
It’s creamy and rich…The Husband said “It tastes like a ham and cheese melt on steroids”. Yummmmm.
The recipe is (pretty much) the one used in the movie The Waitress. They call it I Don’t Want Earl’s Baby Pie! Oh that name cracks me up but it sounds better to say Ham & Brie Brunch Pie don’t ‘cha think?!
It’s a super easy pie to make but you have to leave time to let this baby cool off. It jiggles when you take it out of the oven but let it set for 15 minutes and it’s perfect!
I didn’t change the recipe very much…I used this kind of brie(took off the rind) and this Three Cheese mix…
It’s scrumptious layers of diced ham…Brie cheese…Parmesan Cheese…
Smothered in the egg and cream mixture…
And out of the oven creamy dreamy goodness!
Ham and Brie Brunch Pie
***to make this gluten free simply check your ingredient list making certain everything is gluten free***
* Pie Crust
(For Gluten-Free use a GF crust…I use Whole Foods GF pie crust!)
* 3 slices of ham…diced
(I used Cumberland Gap Diced Ham-8oz. from Publix)
* 1 Cup Brie Cheese-no rind
* 1 Cup Parmesan Cheese
* 4 eggs
* 2 Cups Heavy Cream
* 1/4 teaspoon ground nutmeg
Preheat oven to 400*. Press pie crust into pie plate…if you have one, use deep dish, prick sides and bottom w/ a fork…add pie weights or dried beans to keep crusts shape.
Cover pie crust and bake for 10 minutes. Remove foil and bake for 5 more minutes. Remove crust and reduce heat to 325*.
Cook ham until browned & a little crispy on edges in frying pan…doesn’t matter if it’s already cooked it needs to get crispy edges on your diced pieces!
Spread ham on bottom of crust.
Spread thin-sliced brie over ham.
Sprinkle brie layer with parmesan cheese.
Whisk eggs, cream and nutmeg…pour over cheese & ham.
Bake 45 minutes (I did 50-55 because I kept freaking out because it wasn’t set…then I realized…it’s not going to be completely firm, it’s full of hot cheese!)
or until mostly set. It may be jiggly in the center but it should be nice and hot.
Let it sit for about 15 minutes or until the cheese starts to firm up.
Slice into wedges.
***If you slice this right out of the oven, it will be liquid in the center! Don’t say I didn’t warn you!***
