Well, I don’t know about the healthiest cookie in America…but they’re pretty darn tasty.
Of course, I changed this recipe in a few areas but overall it’s close to the original…
Chocolate Chip and Walnut Oatmeal Cookies~Gluten Free Easily
Preheat oven to 350 degrees.
Chop walnuts and toast them on a cookie sheet lined with parchment paper for 5 – 6 minutes.
***I can’t tell you how much depth of flavor toasting the nuts adds to anything! Don’t leave off this step!***
Melt butter in medium mixing bowl in microwave.
Add brown sugar, stir until smooth.
Combine flours, baking soda, oats and salt in a medium bowl.
Combine butter mixture with the dry ingredients and add the egg and vanilla.
Fold in chopped walnuts and chocolate. Mix well.
The dough will be dry. Shape into balls. Bake on parchment paper lined cookie sheet for 12 minutes or until tops are dry to the touch.
This is supposed to make 32 cookies…really? I want more than a tiny bite so my batch made about 20!
