Hey peeps, I’m getting up at half past crazy today (Friday) and hitting the mall with all the other nuts! By 9:30 in the morning my girls and I will be done pretending to shop for great deals and we’ll be sipping milk shakes and eating burgers at Steak & Shake. The morning burger is really the only reason we “do” Black Friday. The shopping is secondary. IF we happen to find something we want and IF the line to pay isn’t too long THEN and only THEN do we buy. Like I said it’s all about the morning milkshake. Or is it the morning burger? Anyhoo…I loves me some Black Friday! How ’bout you? Do you brave the shoppers to get a good deal or a good burger?
Okay, enough about that…I have a question for ya…
I sure hope ya do, because I’ve got a really good recipe for your leftovers!
Turkey Enchiladas! You could of course use chicken for these but the entire point is to have something fun and quick to make with the leftovers from your Thanksgiving dinner! The Husband LOVES this recipe. Loves it!
(adapted from Cherokee Life Magazine)
* 3 cups shredded white turkey meat
* 8 flour tortillas (med. size)
* 4 ounces low-fat cream cheese (softened)
* 1 small can of chopped green chilies (or less if you don’t like it hot!)
* 2 cans cream of chicken soup
* 1/2 cup milk
* 1 cup low fat sour cream
*1/2 teaspoon ground cumin
* 1 cup shredded Monterey jack cheese (or more if you love it cheesy!)
* Fritos (why? because The Husband and I look for any excuse to eat corn chips.)
Heat oven to 350*
Spray 9×13 baking dish w/ cooking spray
Combine cream cheese, turkey and 1 can cream of chicken soup-stir and mix well
Wrap turkey mixture into tortillas and place in casserole dish
In a bowl combine remaining ingredients. Mix until smooth
Pour the mixture over enchiladas
Bake covered w/ foil for 30 minutes until hot and bubbly
Uncover and top w/ cheese-continue cooking until cheese is melted.
Add salsa….and Fritos. 🙂
