It’s been perfect holiday weather way down here in the deep south of the US! So as usual when I’m cold, I put on a big pot of soup! Let’s do another Live Souper Cozy post!
My latest soup was Tomato Bisque and I paired it with a hearty Chicken Salad ~ Cheddar Panini! Oh my goodness…warm and creamy dreamy!
***And this soup does double duty! After The Husband enjoyed this for dinner I had lots leftovers so I added some veggies, a can of black beans and a chopped up rotisserie chicken and froze portion sizes for The Husband to take for a hearty lunch!***
And for dessert? Dulce de Leche Milk Chocolate Brownie…because nothing says Live Cozy like milk chocolate and thick caramel…

Creamy Tomato Bisque Soup~Gluten Free Naturally
Make certain your canned tomatoes and broths are gluten free
Serves 6 as a side-soup!
* 1 onion chopped super fine. (Use a chopper if you have one)
*1 stalk celery chopped super fine
*2-3 Tablespoons Butter
*3 cloves minced garlic
*3 Tablespoons flour-all purpose
* 1 28ounce can of tomato puree
*1 28 ounce can diced tomatoes
* 1 cup chicken broth~Gluten Free
*4 cups beef broth~Gluten Free
*1 Tablespoon dried basil
*Dash of nutmeg
*1 bay leaf
*1 cup whole milk (or you can use half and half
*1/2 cup whole milk
*2 Tablespoons corn starch
Melt butter in large stockpot. Add your chopped onion and celery to melted butter and sa
ute until tender and onion is transparent.
Take the pot off of heat-Sprinkle 3 Tablespoons flour over onions one Tablespoon at a time, stirring thoroughly until you see a paste form.
Add garlic, all tomatoes, basil and stir.
Add beef and chicken stock and the 1 cup of milk (or cream) slowly stirring all the time.
Add nutmeg and bay leaf.
Heat on med for about a minute then lower heat to low and simmer for 30 minutes, stirring now and then!
Stir the 1/2 cup whole milk and the 2 Tablespoons cornstarch in a mug mixing well with a fork!
Add corn starch mixture to the soup whisking until slightly thickened.
Simmer for 30 more minutes stirring occasionally (very low heat).
I serve the soup straight from the stock pot because I use my “chopper” to get the celery and onion chopped very fine. If you hand chop you may want to cool the soup a bit and put in your blender and pulse a few times. ***Make certain it’s not super hot when you put it in the blender and don’t fill the blender. This would take 2 or 3 separate batches. Then reheat in stock pot and serve!
(To make the swirls on the surface mix a spoon or two of sour cream with a little milk in a baggie. Cut a tiny tiny tiny corner and make a continuous bulls-eye while gently squeezing the baggie. Take a knife and gently swirl!)
If you have leftovers or want to make this soup a 1-pot-meal: add a bag (or bags) of frozen veggies, chopped rotisserie chicken and a can of black beans and it’s great for a hearty meal all by itself! But if you need a delicious sandwich on the side…
Dreamy Chicken Salad~Cheddar Panini
4 Cups of cooked chopped chicken
1 cup chopped (finely chopped) celery
1 Cup mayo
1 cup ranch dressing (more or less to taste)
1 Tablespoon dry mustard
1 or 2 shakes of paprika
1 quick tiny shake of nutmeg(I know…but that’s what I do)
Combine everything mixing well…
Add a slice of sharp cheddar cheese and put in your panini maker or use a frying pan to toast and melt the yummy cheese!
Oh! And we can’t forget dessert!
Dessert says Live Cozy doesn’t it!?
To go with my soup and sandwich I made an easy scrumptious Dulce de Leche Milk Chocolate Brownie!
I CANNOT stop with the dulce de leche…
Dulce de Leche Milk Chocolate Brownie
*Milk Chocolate Brownie Mix
*1 cup Dulce de Leche Caramel (found in the Spanish section of your grocery store-save the rest, you’ll use it or just eat it …I promise!)
Prepare brownies according to directions.
Put foil in 8×8 pan making sure it comes up to the edge on all sides.Spray with Pam.
Put half of mix into pan.
Spoon dollops of dulce de leche evenly over the brownie mix. 6-8 dollops-about 1/3 of the dulce de leche
Gently drag a knife through making thin swirls
(this works better in concept…but it doesn’t matter, it tastes amazing)
Add the remaining brownie mix and dollop the remaining dulce de leche and swirl slightly.
Bake according to directions and let cool completely! (The caramel will need to cool to set up)
Pull out the foil and cut big squares!
And there you have it! This would be a fun dinner to come home to after a long day of Christmas shopping wouldn’t it!?
