Butterscotch Pecan Pie is so easy…butterscotch chips and toasted pecans come together to make this pie so delicious and just a little different than the normal pecan pie…which is my favorite pie, by the way!
Butterscotch Pecan Pie
* 1 Pillsbury Pie Crust-Regular or Gluten Free Pie Crust
* 1 cup Butterscotch Morsels-Regular or Hershey Gluten Free Butterscotch Chips
* 3/4 cup light corn syrup
* 3 large eggs (room temp)
* 1 Tablespoon all purpose flour or Gluten Free All Purpose Flour
* 1 1/2 cups pecan halves coarsely chopped & toasted in the over at 350* for 5 minutes…
Heat oven to 350*
Melt butterscotch morsels in microwave. (1 minute on med. heat-stir-if needed go 20 seconds more-stir. Repeat till melted)
Add corn syrup, eggs and flour to melted morsels. Beat on medium until smooth. Stir in pecans. Pour into pie shell.
Bake for 40-45 minutes until knife inserted into center comes out with bit of filling attached. (If browning too quickly cover with foil. Cool on wire rack for 2 hours and refrigerate for 1 hour or until ready to serve!)
(Thank you Very Best Baking for this recipe…I stayed with their recipe…almost!)
It was scrumptious!
