This is one of my favorite recipes on Gina’s Skinny Recipes – Skinny Taste.com. I’ve told you about her before…you’ve gotta go hang out with her and look at her gorgeous photos of her scrumptious low fat recipes but have your printer ink loaded…you’ll want to print out all of them!
I think this is perfect for a weeknight supper, no one will know it’s low fat!
And if you’re eating gluten-free like I am, just use gluten-free pasta and as always double check all everything for the evil gluten!
I stuck with Gina’s recipe almost exactly! I added a bit of extra red sauce and 2 small grilled chicken breasts…Here’s my version:
(adapted from Gina’s Skinny Recipes!)
*1 lb. whole wheat or gluten-free ziti
* 2 small grilled chicken breasts (chopped or shredded)( I marinate chicken in gluten-free Italian dressing for at least 30 minutes before grilling)
* 28 oz crushed tomatoes
* 14.5 oz diced tomatoes
* 2 teaspoon minced garlic (in a jar)-more to taste…
* 10 oz frozen spinach (thawed)
* 2 teaspoons chopped basil
* 1 1/2 teaspoon oregano
*Salt and pepper to taste
* 8 oz. low fat ricotta (or fat free)
* 1/4 cup Parmesan Cheese
* 2 cups (8 oz) Part Skim Mozzarella
Preheat oven to 375* Spray a 9 x 13 inch pan w/ cooking spray
Cook pasta according to directions…drain and return to pot

Transfer to baking pan…Bake for 30-40 minutes or until mozzarella is melted and it’s hot and steamy in the center!
This freezes great!
Make it for dinner and freeze the leftovers for lunch!
