Have you seen the movie The Waitress?
I love that movie because of the pies. Yes, it only takes pies to make me love a movie. But really, these pies are so much fun…they have the best names…like this one: Marshmallow Mermaid Pie! Oh how delightful. (I’m not recommending The Waitress because there are some moral issues with the movie. It ends right as rain though…just a disclaimer)
When the movie came out the studio put recipes up for all the pies. The recipes are all over blog-land, which made me so happy!
My daughter Bethany is due in May and her baby shower is next month…we’re doing a Cutie Pie Baby Shower! The menu is full of pies…savory pies, sweet creamy pies, fruit pies! Needless to say, I’m practice-making pies every weekend!
Which brings me back to The Waitress…I had to try the Marshmallow Mermaid Pie from the movie ’cause me and marshmallows…well, we have a special relationship.
For this scrumptious pie you melt marshmallows…Ummmm, yum!
Then add grated (or chopped !) unsweetened chocolate!
I could have eaten this entire mixing bowl full of creamy goodness…
Here’s the sweet recipe!
Marshmallow Mermaid Pie
Graham cracker crust
Use gluten free graham crackers or a regular gluten free crust for a gluten free version of this recipe!
34 large Marshmallows (8oz)
1/2 cup whole milk
1 1/2 cup whipping cream (or heavy cream)
1 oz. unsweetened chocolate, grated
Heat marshmallows and milk in a 3 qt. saucepan over low heat until smooth, stirring constantly. Remove pan from heat. Cool completely. (at least 30 minutes) In large bowl with mixer at med. speed, beat cream until stiff peaks form. Fold marshmallow mixture into whipped cream with grated chocolate. Spoon filling into crust. Refrigerate pie for 3 hours. Top with mini marshmallows!

mmmm, pies 🙂 we had a pie day party on National Pie Day on January 23 and it was so much fun, so i have no doubt that the shower will be a hit…cute idea!! have a great day 🙂

I haven’t watched the movie…but could you tell me why it’s called a Mermaid Pie? I’m planning a Mermaid/Beach Party for my (soon to be 5 yr old) daughter and the name fits anyway…heh.
Also…is it runny or like marshmallows when you cut it? :o)

In the movie she says she named it ‘mermaid’ when she was in her mermaid stage!!! xo
