I dreamed this up the other night. No kidding, I woke up knowing exactly what I wanted to try. Some people dream of the beach…I dream of cookies!
These scrumptious oatmeal pies have Dolce de Leche-Chocolate-Marshmallow filling…heaven help me, they are YUM!
Dolce de Leche is the thickest most delicious caramel ever!
Don’t make the following cookie recipe without the filling. This cookie recipe isn’t that sweet on it’s own, it neeeeds the filling. I had to do a softer cookie, but not too thin to support all that creamy caramel goodness!
Oatmeal Dolce de Leche-Chocolate-Marshmallow Pies!
Gluten Free Easily
* 1 cup soft butter
* 1 cup brown sugar
* 1/2 cup white sugar
* 2 eggs
* 1 teaspoon vanilla
* 1 1/2 cups all-purpose flour
***Use Gluten Free All Purpose Flour (I like King Arthur’s)
* 1 teaspoon baking soda
* 3 Cups old fashion oats
(Use Gluten Free Oats like Bob’s Red Mill)
Preheat oven to 350* Spray cookie sheet with cooking spray (Pam)
Cream butter, brown sugar and white sugar. Beat in eggs, one at a time. Stir in vanilla.
Combine flour and baking soda and mix into the creamed ingredients.
Blend in the oatmeal.
Drop by rounded spoonfuls onto cookie sheet~I made huge cookies. Next time I’ll do small ones!
press rounded dough making it flatter. But not too thin.
***While cookies are baking get filling ready***
Bake for 8-10 minutes, depending on the size of the cookie.
Filling
* 1 can Nestle Dolce de Leche (found in the Spanish food aisle of your grocery store)
* 1 1/2 cups semi-sweet chocolate chips
(Use Gluten Free chips like Nestles)
* 1 tablespoon butter
* marshmallow creme (could use mini marshmallows but big marshmallows won’t work!)
Put first 3 ingredients in a pan and slowly melt chocolate chips, stirring the whole time.
When melted and combined take off heat.
Assemble the Pies!
While cookies are still warm but not hot, carefully spread some dolce de leche-chocolate filling on one cookie and some marshmallow creme on another cookie and sandwich them together. Fill all the way to the edges…this makes them pretty!
***I made huge cookies…you know me, bigger is better!
Next time I’ll make small, maybe 3 bite cookies!***

My first glance was “I know I have been told I have a big mouth but there ain’t no way I can get that in there.” Then I looked closer. LOL Jo just made me some oatmeal scotchies and they are out of this world. These look good except I would have to substitute chocolate for the caramel since I can’t eat. Gums up the braces badly. 🙂 But I can get a high from these. You know…it is a good thing I am not married to you. I would be as big as a house. Either that or I would have to ride 50 miles a day.
Yummy- I make these cookies with just the chocolate filling. Can’t wait to try with the marshmallow added!
My oatmeal cookie redipe has 2tbsp. of orange juice added to it.
