During this time of year I’m conflicted. Do I want to be in the kitchen baking or outside enjoying perfect weather?
Here in the deep south of the US the tips of trees are just starting to show their colors. Mornings are chilly and on most days the sky is pristine blue. But the baker in me wants nothing more than to hang out with my mixer and whip up something sweet to nibble on in the evenings when I snuggle on the couch with The Husband, the pups, and Reba-the-cat!
Here’s a recipe that’s yummy enough to make the baker in you tickled pink and still leave lots of time for outdoors!
If you have Celiac Disease you probably know that Rice Krispies now have a gluten free version! Glory to God in the highest! I’m serious.
And now, thanks to the fine people at Kellogg’s we can enjoy them without me getting sick for a week!
Peanut Butter~Marshmallow~Rice Crispie~Fudge Brownies!
(Use gluten-free ingredients if you have Celiac Disease)
*1 box of your favorite brownie mix-follow directions for baking
*4 cups mini-marshmallows
*16 oz. package semi-sweet chocolate chips
*1 cup creamy peanut butter
*3 tablespoons butter
*2 cups Rice Krispies
Preheat oven as directed on brownie package and line pan with parchment or foil~
*After brownies are baked according to box remove them from oven and spread mini marshmallows on top. Return to oven for 3 minutes to soften marshmallows. Remove from oven and spread softened marshmallows all over the top of brownies.
*Let them cool…
Now make the good stuff!
In a pan over low heat, combine chocolate chips, peanut butter and butter. Stir continually until mixture is smooth. Add Rice Krispies and stir to coat.
Drop spoonfuls of mixture over marshmallow layer and spread evenly.
This is not a tidy process. It’s a ooey-gooey process!
When you get the topping as spread-out as possible put them in fridge for 2-3 hours before cutting!
(If you put foil in the bottom you can simply lift out foil and cut outside the pan!)
If you use the Gluten Free Rice Krispies you will need to eat these within about 12 hours or freeze what you haven’t eaten. They taste yummy right from the freezer BUT if you keep them in the pantry to eat the next day the cereal feels stale! Boo hoo…but really you can simply freeze what you don’t eat and enjoy them from the freezer!
This is not an issue for the regular Rice Krispies !
