Since my Celiac diagnosis in May one of the biggest challenges has been family get-togethers.
As I write this The Husband, who is king of dressing & gravy on Thanksgiving, is practicing on some gluten-free dressing. If it turns out well he’ll make it for me on Thanksgiving. So many people I’ve spoken with have a rough time during their first holiday season trying to cook their favorite foods sans-gluten. So it’s just kinda amazing when someone makes the effort to make something yummy that I can eat!
My girls have been so sweet to try to make me gluten-free options. Bethany made yummy gluten-free Pumpkin Woopie Pies for a birthday party and Stephanie made these Peanut-Butter Nutella cookies for out Pumpkin Carving Party!
They were delicious and super easy and a great excuse to buy Nutella!
(Oh, and you don’t have to be eating gluten-free to love these cookies!)
Peanut Butter Nutella Cookies~Gluten Free Naturally!
1 cup creamy peanut butter
1 cup sugar
1 large egg – beaten
1 teaspoon salt
1 teaspoon baking soda
9 teaspoons Nutella
* Preheat oven to 350 degrees.
*Mix sugar, peanut butter, egg, salt and baking soda.
* Measure 1 tablespoon of dough. Roll dough into a ball and place onto cookie sheet. Gently press dough ball down using the palm of your hand. Continue forming balls until dough is gone. Space approx 1? apart.
* Bake for approx 8-10 minutes. CAREFULLY remove tray from oven. Using a 1/2 teaspoon measuring spoon, GENTLY make an indentation in the middle of each cookie. Fill each cookie with a dollop of Nutella. Return tray to oven and continue cooking for 2-4 minutes until golden.
* Transfer cookies to a cooling rack and allow to cool before enjoying.
