This is NOT figure friendly recipe Peeps! I had to test it before I made it for the 5th Annual Pumpkin Carving Party! It’s super easy and I really liked it. The Husband LOVED it. It’s kinda “pumpkin-pie” texture on the bottom and “dump-cake”texture on top…
I copied this to Word back in September. It was on a blog and I thought I had copied the name of the blog with the recipe…but I didn’t! If this recipe is your own…please forgive me and tell me and I’ll give you all the credit!!!
This is all about the food for the Pumpkin Carving Party. I’m serving my Butterscotch Apple Crisp, (posted it HERE) and wanted another Crisp, with a pumpkin punch. This one is a maybe, but I’m trying another one this weekend…I’ll let ya know which one is better!
In the mean-time here’s the YumAliciouS recipe…easy and quick!
Pumpkin Crunch
1 large can of pumpkin (do not confuse this with Pumpkin Pie filling..broke the mouth one time)
1 can of evaporated milk
3 eggs
1 cup sugar
1/4 teaspoon Cinnamon
1 box of yellow cake mix without pudding
1 cup of chopped walnuts (lightly toasted/350* for 4 minutes)
2 sticks (1 cup butter)
1. Grease a 13x9x2 pan or line with wax paper
2. Blend pumpkin,,milk,eggs,sugar and Cinnamon
3. Pour in pan
4. Sprinkle with cake mix over pumpkin mixture
5. Spread nuts over cake mix
6. Span melted butter over nuts
7. Bake at 350 degrees for about an hour or until top is brown.

Hey Pat! I may have seen this on your blog last fall!Thanks for posting it. The one I copied though posted it in September…we couldn’t get canned pumpkin in September in these parts! Just had to say, I almost made the butterscotch apple crunch today. Got ready to pour the butterscotch morsels on top of the apples and realized they’re not GF. So, I substituted chocolate chips. This stuff is amazing. I’m serious. One of my new favorites. Thanks for making my day, Rob. Your recipes always look so good I have to try them. And I’m never disappointed!
