I’ve never been a huge fan of asparagus, until now! Just in case you haven’t tried this super simple recipe I wanted to pass it along to you!
Ingredients:
1 – 1 1/2 lbs. of Asparagus
1/4 cup Parmesan Cheese
Salt
Pepper
1/2 teaspoon minced garlic
1 – 2 Tablespoon Olive Oil
Instructions:
Preheat oven to 400*
Cut the tough ends of the asparagus – rinse and pat dry
Arrange in your baking dish and drizzle olive oil, salt, pepper, garlic and Parmesan Cheese over asparagus.
With tongs mix/toss asparagus along with other ingredients
Arrange asparagus in a single layer in baking dish
Cook for 8 -15 minutes (depending on how thick your asparagus is) until tender
Serve immediately
This is a perfect spring side dish and couldn’t be easier!

I LOOOVE asparagus. Will definitely do it this way next time! Sometimes I just cook it and then drizzle it with balsamic vinegar. YUM! XOXO

Katie (who loves to cook BTW) taught me how to do this. I love all veggies except for English peas.
And this is a yummy way to eat one of my favorite green things.
P.S. I’ve been buying big bags of fresh kale and cooking it. Delish and lots of iron too.
Yum! I have a hard time knowing what to use to season vegetables to make them tasty.
Oh, how delicious! I love roasted asparagus. Also great roasted in a pan if you don’t want to turn on the oven.
