Believe it or not, this is the most googled food post I’ve ever done! I mean 12 months of the year people google fried corn!
Honestly, it’s a go-to favorite on holidays around here…if you haven’t tried it do yourself a favor and give it a go!
I’m getting my menu ready for Thanksgiving and this is one of the side-dishes I’ll be taking to my Sister’s house! It’s been on our Thanksgiving menu forever it’s delicious and it’s gloriously gluten free~naturally!
Although i’st a Thanksgiving favorite it’s easy enough to quickly put together anytime! You can use fresh or frozen corn. I’m partial to white corn for this dish.
It’s adapted from Southern Living, The Ultimate Cookbook...which has been my “go-to” cookbook for almost ten years. For that matter, Southern Living cookbooks have been the standard in my family for as long as I can remember.
Southern Fried Corn
12 ears fresh corn (I like white corn…you can use 2 – 10 oz. bags of frozen corn)
8 – 10 slices of bacon
1/4 cup butter
1 teaspoon salt
1/2 -1 teaspoon ground pepper
*Cut corn from cob…set aside
*Cook bacon until crispy…(use large skillet). Reserve 2- 3 tablespoons of bacon drippings.
*Crumble or chop bacon into little pieces.
*Cook corn, butter , salt and pepper in bacon drippings over med. heat for app. 20 minutes or until corn is a bit brown. Stir often.
*Stir in bacon pieces. You can serve immediately or even put into a baking dish and heat in the oven for 15-20 minutes right before serving. (Works a little better to make and serve immediately!)
