This cobbler has a sweet biscuit like topping and a bubbly strawberry and syrup filling…
1/2 cup sugar
1 tablespoon cornstarch
11/2 cup water
4 cups chopped strawberries (chop into large chunks)
2 tablespoons butter, diced
1 cup all purpose flour
1 tablespoon white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons butter
1/2 cup heavy whipping cream
Preheat oven: 400*
Spray a 2 quart baking dish…I used a deep pie dish
Combine sugar, cornstarch and water. Cook over medium heat, stirring constantly until thick and hot. Stir in strawberries and remove from heat. Pour into baking dish and dot with diced butter.
Whisk flour, sugar, baking powder and salt. (Mix well)
Blend in 3 tablespoons very soft butter. Mix in cream. Mixture will be soft. Spoon on top of berries.
Bake for 25 minutes until topping is browned and filling is bubbly!
In the interest of full disclosure…I’m not a “light dessert” person. I loved the taste of this but I felt ripped off and promptly baked chocolate chip cookies.
I know most people aren’t like me so this would be a scrumptious dessert for you light fruity dessert people!
(I think this would be great as a dessert at a Brunch!)
