Salads are the go-to light and easy dinner for summer.
Every season has it’s magic and I love them all. In the summer time, I’m partial to early mornings and evenings, when the sun is subdued. At supper time even though everything begins cooling off, I still don’t want to heat up the kitchen to cook dinner. So we’ve been having lots of salads.
Because I love baby spinach and feel like it’s healthy, I use it a lot. One salad we ate recently has avocado, tomatoes, red onions and grilled chicken breast. I made a Lime Cilantro Vinaigrette which honestly, wasn’t good enough to pass along. Next time I’ll try another recipe for the Lime Vinaigrette because I like the idea…I’ll let you know if I find a good one…better yet, do you have a good lime vinaigrette recipe I could try?
This next salad is our go-to summer supper. I first picked on up at Costco in the pre-made section. I wasn’t really sure about it but WOW! We absolutely love it. We make this once or twice a week now. I know, the eggs are going to throw you off but trust me they really work with all the ingredients- here’s the 411:
Poppy Seed & Grilled Chicken Summer Salad
*Baby Spinach- (1 or 1 1/2 bags)
*Bacon Bits
(I use Publix Brand-they package only the meat of the bacon- no fat- You’ll find the small packets on the salad dressing aisle)
*Dry Cranberries
*3 Hard boiled eggs peeled & cut in half
*Mozzarella cheese -shredded
*Grilled Chicken cut in strips
(The Husband grills extra Chicken Breasts on the weekends and we keep them ready for dinners during the week)
*Cherry tomatoes
***Brianna’s Poppy Seed Dressing-the BEST poppy seed dressing in the world. 🙂
(I mix this with a low fat poppy seed dressing to make myself feel better :))
Toss the salad and enjoy. Don’t leave out the eggs…really, even if you just eat the whites…

I loved this book as well. It surprised me in so many ways. This is not a “how-to” book about weight loss, but a beautiful and candid (and sometimes funny) memoir about a woman’s journey toward self-acceptance. Knowing she was God’s beloved made it possible for her to love herself. I know all women, regardless of size, will appreciate Teasi Cannon’s honesty!
