Today I’m doing a Flashback Friday…this is a really good cookie recipe that I’ve been making for years! Surprise Cookies…the surprise is a Rollo in the center which melts into gooey chocolate, caramel molten goodness!
Surprise Chocolate Cookies!
2 1/2 Cups All Purpose Flour
3/4 Cup unsweetened cocoa
1 teaspoon baking soda
1 Cup sugar
1 Cup brown sugar
1 Cup butter (softened)
2 teaspoons vanilla
2 Eggs
1 Cup chopped pecans
app. 30 Rolo Chewy Caramels in milk chocolate
1 Tablespoon sugar
1/2 Cup Toffee Chips
Heat oven to 375* . Spoon flour into measuring cup;level off. In small bowl, combine flour, cocoa,and baking soda; blend well.
In large bowl, beat 1 cup sugar, brown sugar and butter until light and fluffy. Add vanilla and eggs; beat well. Add flour mixture; blend well. Stir in 1/2 cup of the pecans.
For each cookie, with floured hands, shape about 1 heaping tablespoonful dough around 1 candy, covering completely.
In small bowl combine remaining 1/2 cup pecans and toffee bits. In another bowl put the remainder of the sugar. Press one side of each ball into pecan mixture. Then into sugar. Place nut side up, 2 inch’s apart on ungreased cookie sheet. (I use baking sheets or parchment)
Bake at 375* for 7-10 minutes. Cool on cookie sheets for 10 minutes or until cool…otherwise the caramel will make a mess on the bottom of the cookie!
These are gooey chocolate-caramel molten deliciousness when hot out of the oven! Really, really good Peeps!

First, the incredible molten cookies…chocolate heaven. Oh my, those cookies could really get ya in trouble. I would imagine it’s safer to bake them for a special event to avoid the temptation og eating a dozen!

the taste of one of these is still lingering on my tongue as i type this. fantastic cookie! i like that the dough’s not too sweet, because it would compete with the candy otherwise.
i made a half batch and 2 packages of rolos was perfect! the only perplexing thing is that mine didn’t spread like yours did. i enjoy a thicker cookie, though, so i’m pleased! thanks for sharing!
btw, made the banana chocolate chip cake you posted and that was a HUGE hit with our small group. made it as a 9×13 and it worked fine. it was a thick piece though.
