Toffee Snowball Cookies are one of my favorite holiday treats!
This recipe is amazing and can be made with regular all purpose flour or gluten free all purpose flour!
I wanted to make something white for our Christmas party…so I found a few recipes for Snowball Cookies and added my own twist…pieces of Heath Bar! These are really easy and super good. Not too sweet so they go really well with coffee…and their white and called snowball cookies…gotta love it.
*3/4 cup butter, softened
* 1/2 cup sugar
* 1 egg
*2 teaspoons GF vanilla
*2 cups Gluten Free all purpose flour
* 1 cup chopped pecans-toasted(toast on parchment paper at 350* for 7-8 minutes)
* 1 cup Heath bits
* powdered sugar
Cream butter and sugar. Stir in egg and vanilla. Mix in the flour and fold in pecans and Heath bits.
Make into walnut size balls and bake on (ungreased) parchment covered cookie sheets in a 350* oven for 15-17 minutes. Cool on wire racks and roll in powdered sugar several time to coat well. Makes about 38 small walnut -size cookies!
